We allow our hearty game salamis with up to 65% game meat content a natural maturation of over 3 weeks. Artificial GDL rapid ripening agents are not used in our sausage. Natural flavors from the needles of mountain pine and silver fir, Swiss stone pine, gentian and bread clover make each salami a real treat.
100g wild boar sticks are made from 140g wild boar and pork meat. 65% wild boar meat, 35% pork meat, table salt, dextrose, spices (thyme, rock salt, chanterelle), antioxidant: sodium ascorbate, seasoning, preservative: sodium nitride, ripening cultures, intestine from bovine collagen.
Packed under modified atmosphere. May contain traces of mustard and celery.
