How does the Belgian broccoli work?
When honing tool steels, the burr created during grinding is removed and the cutting edge is polished. During this process, the following happens to the water-moistened Belgian whetstone:
When the blade of the tool rubs against the uniformly fine-grained surface of the stone, the softer components of the sedimentary rock, such as ash, clay, and mica, are first removed by abrasion, and the embedded garnets become slightly more prominent. Then they too are released from the parent rock (this is called grain eruption) and form a thin paste with the water, the grinding paste.
During the smooth grinding motion, the rounded edges of the garnets penetrate the steel easily, removing fine shavings from the metal. The hardness of the garnets causes a very sharp abrasion, but the round shape of the spheres prevents cracking and instead creates a fine polish. This combination of speed and precision is unique worldwide. It allows for an edge sharpness that can, for example, cleanly cut through wood fibers.
