Our filleting knife is the ideal tool for precisely preparing fish. Since sharpness, edge retention, and corrosion resistance also play a crucial role, the polished blades of our knives are made of German kitchen knife steel conforming to DIN WN 1.4116 (X50CrMoV15). 

The blue handles, made of high-quality, acid-resistant polypropylene, are seamlessly injection-molded onto the tang—as is standard for professional kitchen cutting tools for hygienic reasons. Made in Solingen!
